In one of our date night cook offs, my husband and I decided to make grilled cheese sandwiches. After we had our fill of savory sandwiches, I had the idea to attempt a dessert grilled cheese using Sara Lee Pound Cake as the “bread.” In the end, we didn’t make one dessert grilled cheese; we made TWO–apple pie grilled cheese and a dark chocolate raspberry grilled cheese. (We’ll post that recipe later :))
Apple Pie Filling
1 Gala Apple
1/3 c. brown sugar
½ tsp cinnamon
1 tsp vanilla extract
1 tsp lemon juice
2 tsp cornstarch
Sliced Brie (3 oz. per sandwich)
Pound cake (2 slices/sandwich)
Reserved Apple Pie Filling Juice
2 TBSP orange blossom honey
In a saucepan, combine apples, brown sugar, cinnamon, vanilla, lemon juice, and cornstarch. Cook over medium heat until thick and bubbly. Remove and cool.
Place 3 slices of brie onto each slice of cake. Place 2-3 TBSP drained apple pie filling on bottom cake. Place on sandwich top. Brush sandwich with melted butter. Grill at 325 degrees for 2-4 minutes. Flip and repeat. If bread is browning too quickly, reduce heat. Grill until cheese melts.
In a small bowl, stir together apple pie filling juice and honey. Drizzle on plate and serve on the side.
