
After my husband & I met, he had one simple request our first Christmas together–to make his mother’s chocolate bread. I’m not sure if he was excited to be dating someone who could bake or if he was testing me. Either way, the chocolate bread worked, and we were engaged less than a month after Christmas. We’ve been together for over six years now, and his mom’s chocolate bread is still on the holiday menu.
Ingredients
3 c. sifted cake flour
3 tsp baking powder
1 tsp salt
1 egg
1 1/4 c. milk
1 c. brown sugar, firmly packed
1/4 c. melted shortening
3 squares Baker’s Chocolate unsweetened chocolate, melted
16 oz Nestle semi sweet chocolate chips
1/2 c. maraschino cherries, drained & chopped
Directions
Heat oven to 350 degrees. Grease and flour three mini loaf pans or one large loaf pan.
In a large bowl, sift together flour, baking powder, and salt. Stir in egg, milk, and brown sugar. Add melted shortening and chocolate to batter and stir until blended. Stir in chocolate chips and cherries. Pour batter into prepared pans.
Bake for 45 minutes or until toothpick inserted in the center comes out clean. Cool in pans for 15 minutes. Remove from pan and cool completely before slicing.
