This isn’t my first attempt at a Chubby Hubby Peanut Butter Pie; however, this is the new & improved version of it. Other than a traditional pb&j sandwich, I’m not a huge fan of peanut butter. HOWEVER, my husband and kids have peanut butter running through their veins. Peanut butter candy, peanut butter ice cream, peanut butter sauce, peanut butter pancakes, peanut butter on their waffles, peanut butter on a spoon, peanut butter, peanut butter, peanut butter… Soooooo….with that, I felt it was my duty as a good wife and mother to create a peanut butter pie just for them. The end result was a peanut butter pie with peanut butter sandwich cookies (Nutter Butters) chocolate chips, peanut butter mousse, chocolate drizzle, caramel, and chocolate chip cookie dough.
2 c. crushed peanut butter wafer cookies (Nutter Butter Cookies)
1/4 c. butter-melted
Combine all ingredients. Press into a 9” pie plate. Bake at 350 degrees for 15 minutes. Remove from oven and allow to cool.
Cookie Truffle Layer
¼ c. unsalted butter, room temperature
2 TBSP sugar
1/4 cup light brown sugar, packed
1 TBSP light cream
¼ tsp vanilla extract
½ c. all-purpose flour
1/4 teaspoon salt
1/2 cup mini semisweet chocolate chips
Beat butter and sugar until smooth. Add cream and vanilla. Beat until smooth. Stir in flour and salt. Stir in chocolate chips. Spread over cooled crust. Chill until set.
¾ c. dulce de leche
2 TBSP light cream
In a microwave safe bowl, heat dulce de leche for 30 seconds. Add light cream and stir until smooth. Spread over cookie layer. Sprinkle with ½ c. mini chocolate chips.
Peanut Butter Layer
1 c. creamy peanut butter
8 oz. cream cheese
1 c. powdered sugar
8 oz container Cool Whip
1 c. heavy cream
1/2 c. powdered sugar
In a bowl, cream peanut butter, cream cheese, and 1 c. powdered sugar. When smooth, beat in Cool Whip.
In a mixer, beat heavy cream and 1/2 c. powdered sugar to stiff peaks. Fold whipped cream into peanut butter mixture. Pipe in rosettes over caramel layer & chocolate chips. Refrigerate until set.
2 oz. dark chocolate
1 TBSP heavy cream
In a microwave safe bowl, combine dark chocolate pieces and heavy cream. Microwave in 30 second intervals, stirring between each until chocolate is melted. Allow to cool for a couple of minutes. Drizzle over peanut butter layer.
Top with 1/2c rough chopped peanut butter cookies
