Before we go camping, we always stock the travel trailer with lots of cocktail mixing ingredients. However, no matter how big our trailer is, with 2 kids, 2 dogs, and all their crap, storage is scarce, so I have to be strategic in my cocktail recipe planning. Oh and did I mention that I don’t use cocktail mixes? Yeah…I make everything fresh. Now, you understand the packing predicament.
For our St. Augustine weekend, the plan was to use a CK Mondavi Blonde Five and mango. Because Florida (anywhere in Florida)is hotter than hell in the summer, I also knew that my cocktail had to be cool and refreshing.
The end result…a beautifully yellow-orange glass of sweet, tart, light yumminess.
1 c. frozen mango puree
1 c. like syrup (1 c lime juice & 1 c sugar heated just until the sugar melts)
1 can coconut water
1 mango-peeled & chunked
1 bottle CK Mondavi Blonde Five
Lemon Lime Seltzer
Mix mango puree, lime syrup, coconut water, and wine in a large pitcher. To serve, pour 1-2 c punch in cocktail shaker. Add ice and shake. Pour into a glass with a few mango chunks. Top with Seltzer.
