Summer Wine Cocktails with #CKMondaviWines

As the kids go back to school and parents around the country cheer, it’s a sad reminder that summer is quickly coming to an end.  However, before we pack away our beach chairs and umbrellas, there’s still time to enjoy the best summer cocktails I’ve ever made, courtesy of CK Mondavi Wines.

CK Mondavi Blonde Five

wp-1468691158438.jpgThe Coco-Mango Cocktail is a fruity, but not too sweet, blend of wine, coconut water, mango puree, and a little fizz for fun. CK Mondavi’s Blonde Five is a light wine with aromas of honeysuckle and pear and flavors of baked apple, honey, and lemon zest.  Blonde Five is a refreshing wine on its own, but add a little fruit and fizz and the result is a cocktail perfect for hot afternoon.

1 c. frozen mango puree

1 c. like syrup (1 c lime juice & 1 c sugar heated just until the sugar melts)

1 can coconut water

1 mango-peeled & chunked

1 bottle CK Mondavi Blonde Five

Lemon Lime Seltzer

Mix mango puree, lime syrup, coconut water, and wine in a large pitcher. To serve, pour 1-2 c punch in cocktail shaker. Add ice and shake. Pour into a glass with a few mango chunks. Top with Seltzer.

CK  Mondavi Sauvignon Blanc

IMG_20160714_142821Of all the summer cocktails, Poolside Watermelon Punch was my favorite.  Granted, I live in Florida where daily temps push 100 degrees with sweltering humidity, but this cocktails mix of watermelon, lime, and rum was especially yummy at our July 4th pool party. CK Mondavi Sauvignon Blanc is a brilliantly light wine with aromas of lemon, kiwi, and herbs and flavors of grapefruit and other citrus. Again, this wine is great on its own, but when added to watermelon, it was an instant cool down on a hot holiday weekend.

2 c. watermelon juice–puree watermelon in a blender and strain through a mesh colander

2 c. cooled lime syrup–equal parts lime juice and sugar heated until the sugar melts

1 c. silver (clear) spiced rum–spiced rum is vanilla flavored

1 bottle CK Mondavi Sauvignon Blanc

Mix together in the watermelon cavity and serve over ice!

**TIP…cut a flat bottom on the bottom of the watermelon to help it stand up.

CK Mondavi Sauvignon Blanc

wp-image-186078890jpg.jpgI loved CK Mondavi’s Sauvignon Blanc so much that I had to create a second cocktail, the Sunset Wine-tini. This time the goal was to create a cocktail to toast a fabulous beach vacation with the kids. The sunsets over the Gulf of Mexico are epic, so I wanted a cocktail to reflect the colors of the afternoon sky. With a blend of crisp wine, pineapple juice, pineapple rum, and pretty pink grenadine, I think I succeeded.

1 bottle CK Mondavi Sauvignon Blanc

2 c. Pineapple Rum

3 c. Pineapple juice

Mix together in a large pitcher. To serve, shake with ice and pour into chilled martini glasses or champagne flutes. Then, gently pour in 1 tsp grenadine and allow it to settle at the bottom of the glass. Serve immediately.
