Bacon-Chocolate Twists with Black Lager Affogato

IMG_20160711_190144As a foodie and craft beer chef, my brain is always in overdrive brainstorming ideas for combining two of my favorites…beer and dessert.  Many people can’t imagine beer and desserts going together, but they are SOOOOO WRONG!  True…BAD beer doesn’t work well with dessert, but EXCEPTIONAL beer is perfect for a dessert.

This dessert has two parts…the dipping bread stick and the affogato. I realize that traditional affogato is coffee-based dessert, usually as vanilla ice cream drowned in hot coffee. However, why not replace the coffee with something a bit tastier??? That’s exactly what I did, and WOW! It was A-M-A-Z-I-N-G!!

First up…the Bread Stick

This bread stick is actually a Sweet Bacon & Chocolate Twist using puff pastry dough and two of my husband’s favorite foods…bacon and chocolate.

1/4 c. granulated sugar

7-8 slices CRISPY cooked bacon–use the microwave.  It’s much quicker and always gives you crispy bacon.

1/4 c. grated chocolate–I prefer dark chocolate

1 puff pastry sheet

1 egg + a little water whisked together to make an egg wash

In a food processor, pulse/blend sugar and cooled bacon until you have a fine ground meal.

Roll out puff pastry to 1/2″ larger on all sides.  Brush the puff pastry with a generous helping of egg wash. Sprinkle and completely cover with bacon sugar.  Grate chocolate directly onto the bacon sugar.  Use your hand to gently press the chocolate and bacon sugar into the puff pastry.

IMG_20160711_163001Using a pizza cutter, cut 3/4-1″ strips of puff pastry (you should get approximately 12 strips).  Twist each strip 2-3 times and place on a parchment covered cookie sheet. Brush the exposed dough sections of the twists with more egg wash.  Bake at 400 degrees for 20 minutes.  When done, cool completely.

Next Up…Beer Syrup

I know.  This may sound completely weird, but this little discovery can be used for soooo many things.  Drizzle it over a cupcake or pancakes or waffles or bread pudding or cake or just eat it by the spoonful.  It’s that good!

12 oz dark beer–I used Sprecher’s Black Bavarian Lager.  You can use any beer.  Think about the flavors you want to compliment and choose a beer that will work.  I would NEVER use a cheap beer.

2/3 c. sugar

1 TBSP butter

In a saucepan, combine all ingredients.  Bring to a boil and allow to boil and reduce for 5-7 minutes.  Remove from heat and get ready to prep and serve.

Last Step…Serving


2 scoops vanilla ice cream per bowl

approximately 1/3 c. hot beer syrup

Serve with bread sticks and watch your guests drink every last drop of their dipping sauce!
