The state of our world these days is depressing. Many of us are torn between homeschooling and sending our kids back to school. Many of us continue to shelter in place. Many of us need a break. Many of us need a cocktail to cool off and relax.
The Coco-Mango Cocktail is a fruity, but not too sweet, blend of your favorite white wine, coconut water, mango nectar, and a little fizz for fun.
When choosing the wine for this cocktail, use whatever you like. If you prefer drier wines, choose a sauvignon blanc or a pinot grigio. If you prefer something sweeter, a moscato will work just fine.
- 1 c. mango nectar
- 1 c. lime syrup (1 c lime juice & 1 c sugar heated just until the sugar melts)
- 1 can coconut water
- 1 mango-peeled & chunked
- 1 bottle white wine
- seltzer or club soda
- Mix mangonectar, lime syrup, coconut water, and wine in a large pitcher. To serve, pour 1-2 c punch in cocktail shaker. Add ice and shake. Pour into a glass with a few mango chunks. Top with seltzer or club soda.
