It’s during this time of year that we begin to see pumpkin spiced everything. Pumpkin spiced lattes, pumpkin spiced cream cheese, pumpkin spiced air freshener, etc. etc. etc…. I’m not going to lie. I’m not a huge pumpkin spice fan. In fact, pumpkin pie might be my least favorite pie…ever. HOWEVER, I love pumpkin when it’s just pumpkin…no pumpkin spice blend. For me, I love pumpkin bread, pumpkin muffins, and even pumpkin risotto, so it stands to reason that I needed to make pumpkin cookies, and what a better combination than pumpkin and dark chocolate.
Pumpkin Chocolate Chip Cookies
Ingredients
- 2 sticks butter, softened
- 3/4 c. sugar
- 1/2 c. brown sugar
- 1 c. pureed pumpkin
- 1 tsp vanilla extract
- 2 eggs
- 3 1/4 c. all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 c. dark chocolate chips
Instructions
- In a mixing bowl, cream together butter and sugars.
- Add pumpkin, vanilla, and eggs and blend until completely incorporated.
- In a separate bowl, sift together dry ingredients.
- Add dry ingredients to butter-pumpkin mixture and blend until combined.
- Stir in chocolate chips.
- Scoop out 1-2 table spoon portions onto a silicone or parchment lined cookie sheet.
- Bake at 350 degrees for 8-10 minutes, depending on your desired texture.
- Cool completely and enjoy!
