One of my husband’s favorite meals to order when we eat at the Columbia in Ybor City or at El Siboney in Key West is the Ropa Vieja, so as a New Years Eve treat, I decided to try it out in my Instapot (electric pressure cooker), and it couldn’t have been easier. In fact, we had Ropa Vieja in less than an hour, and we didn’t have to drive to a restaurant on New Years Eve!
So what is Ropa Vieja? Translated it means “old clothes,” but foodwise it is shredded beef cooked down in tomato sauce & vegetables. For tonight’s Ropa Vieja, I cooked the beef in my Instapot with tomato sauce and a healthy dose of peppers, onions, and green olives. That combined with some worcestershire and apple cider vinegar, the beef became super tender.
Ingredients
- 2-3 lb. chuck roast
- 1 large onion-julienned
- 1 medium bell pepper- julienned
- 15 oz can tomato sauce
- 1 TBSP Worcestershire
- 1 TBSP apple cider vinegar
- 1/2 c. sliced olives
- 1 tsp salt
- 12 tsp ground black pepper
Instructions
- Place chuck roast in bottom of instapot. Top with remaining ingredients and cook for 45 minutes (after pressurized). When finished, carefully remove beef from the instapot and shred with 2 forks. Spoon cooking liquid, olives, peppers, and onions over beef and stir to combine. Serve over yellow or white rice.
